Life of Pi Curry Salad (& Other Oscar Party Sliders)

On Sunday night I am headed to an Oscar Party along with, what seems like, half of the world!  Upon learning of this a friend of mine approached me and, looking worried, asked,  “are you thinking a lot about what to wear?” She probably knows me well because I had to admit I hadn’t given it a single thought.  But, I had to add,  “they’re all food bloggers at this party… I’m thinking a lot about what to bring!”

Since appetizers and desserts were well covered, in the ended I decided on a light and simple main course — Best Picture sliders.  Since I don’t have a stockpile of Best-Picture-Slider-recipes, today was an experiment day and my husband and kids were subjects, er guests at tonight’s mock-Oscar meal.

Life of Pi Curry Salad. This was the recipe I was most confident in because it was adapted from my award winning “Thanksgiving Leftover” contest winner of 2011.  The new version is slightly easier, healthier, doesn’t require cranberry sauce and even has a vegetarian option (detailed below).  When Daughter #2 got home from school she couldn’t stop nibbling out of the bowl.  I gave her a cautionary glance and she looked at me and said, “See Mom, I’m eating broccoli.”

Silver Linings Playbook Philly Cheesesteak.  This is a classic sandwich that is simple enough to make even without a recipe.  Sautee onions, mushrooms & peppers, then add thinly sliced sirloin. When the sirloin is cooked, top with provolone, let melt and place on your slider bun. This was my husband’s favorite and the kids liked it the least (“are those mush-rooms???”).

Amour or Les Miserables French Onion Soup Slider. Based on an internet recipe that was basically lightly herbed, caramelized onions in a grilled cheese sandwich, it didn’t convert well to slider form, even with expensive Gruyere.   Might be worth tweaking in the future though–Worcestershire sauce comes to mind…

Baba Ganoush Vegan Slider

Baba Ganoush Vegan Slider

Zero Dark Thirty or Argo Middle Eastern Vegan Slider:  Also doesn’t need a recipe except for the Baba Ganoush (which you can find here).  Spread  baba ganoush (or good packaged hummus) on a slider bun, then top with roasted red pepper, tomato, cucumber and sprouts.  Doubles as a health food–shhhh.

In the mood for a nice curried sandwich?  I’m sure we’ll be eating this post-Oscar night too!

Curry Salad

Chicken and Broccoli Curry Salad

(Chicken or Tempe or ???) Curry Salad Sandwich

Makes 4 sandwiches (or more sliders…)

Ingredients

  •  Curried Dressing (see recipe)
  • 1 1/2 c cubed chicken or 1 package tempe, cubed
  • 1 1/2 c small (bite-sized) vegetable pieces, like broccoli
  • 1/3 cup dried cranberries or raisins
  • 1/3 cup cashew pieces
  • ¼ cup finely chopped onion

Dressing Ingredients

  • 1 container (6 ounces) orange-flavored yogurt
  • ½ cup mayonnaise
  • 1 to 2 teaspoons curry powder (or to taste)
  • 2 tablespoons dry sherry (optional)
  • 1/2 cup chutney

Directions

1.  Prepare curried dressing.   Whisk dressing ingredients together until well combined, then refrigerate until ready to use.

2.  Steam vegetable pieces until al dente, then cool rapidly in cold water.  Drain.

3.  Combine salad ingredients in a large bowl. Add curried dressing and stir until well combined.

4.  Serve with lettuce on bread of your choice.

    Ha, I definitely haven’t thought about what I’m wearing, with only food & drinks on my mind. Fashion bloggers are fun, but I’m so much more comfortable around food bloggers! Even the Oscar game prizes are food related 🙂
