I think I have a new favorite breakfast!  Yogurt and peaches topped with Homemade Peach Granola.  Sweet and fruity with a nice bit of crunch, it even looks like morning sunshine!

Have you been reading the recent press on probiotics?  Probiotics are the good bacteria found in yogurt and other cultured products. Back in the crunchy granola seventies, everyone talked about the Tibetan monks who lived to the age of 100 eating yogurt.   But today’s research is going deeper.

Anyone who has taken an antibiotic is probably familiar with the ability of probiotics to keep gut bacteria in sync.  But today’s research is looking at additional roles.  Recent studies have investigated possible impacts on type 2 diabetes  and weight management.  Others have looked at immune function and cholesterol control.   peach-granola-bowl

I don’t know if probiotics will live up to the hype when all the research is done.  But one thing is for sure–the taste alone is worth it!  

Now winding back around to my original topic… I just created a new recipe for homemade peach granola.  One of my CSA friends clued me in to how tasty dried peaches are.  When I dehydrated some trays I was impressed with how the sweetness comes out without a drop of added sugar.  So I updated my maple vanilla granola recipe  and the rest is history!

Tips & FAQs

Serving size is approximately 1/3 cup (a light serving of cereal but more than you’d use to top yogurt)

It is important to use very thin pieces of peach or the other ingredients will get too dried out before the peaches are ready.

If you want to make this with dried peaches instead, you can chop them to the desired size and add separately at end.

Peach Granola

A fruity and crunchy homemade peach granola, with less sugar due to the bright sweetness of the fruit.

Ingredients
  

  • Nonstick vegetable oil spray
  • 2 c oatmeal old-fashioned
  • 1/2 c chopped hazelnuts
  • 1/4 t salt
  • 1/8 t ground cinnamon
  • 1/8 t ground ginger
  • 3 T coconut oil or other oil
  • 1/3 cup brown sugar
  • 1 T vanilla extract
  • 3 peaches chopped fine (see note)

Instructions
 

  • Combine dry ingredients.
  • Melt coconut oil (if using) and brown sugar together. Add these and the vanilla to the dry ingredients. Toss to combine.
  • Spray a baking sheet with nonstick spray, then spread out granola mixture. Bake at 225 for about 1 1/2 - 2 hours until peaches are dried but still soft (baking time will vary depending on thickness of peach pieces), stirring a couple of times. Let cool completely then store in airtight container.

    i always make my own granola, but i’ve never incorporated peaches! i like the looks of this and would happily eat it with yogurt every morning!

      That’s what we’ve been doing here Grace 😉 Just went to the farmer’s market for more peaches to make it again!

    Those bees aren’t the only ones working hard in your neck of the woods, Inger. Just look at you! Homemade Peach Granola? Oh my! I must tell Tabi about this recipe. She’s looking for an assortment of snacks to bring to school for her long day:)

    I actually bought a Target brand of Probiotics just yesterday. My son swears by it. I figure it can’t hurt and I’m a “hippie” from way back when still making my own yogurt which btw you should try one day:)

      Thanks Louise. You know I have tried making my own yogurt but the kids complain it isn’t thick enough. Let me know if you have any tips…
