Greek Deviled Eggs

I was a picky eater as a kid.  Hard boiled eggs?  Eeuuuw. Mayo?  No way!  Luckily, I outgrew it!  Otherwise Iā€™d never have made Greek Deviled Eggs!

Last year I noticed lots of fancy deviled egg recipes appearing all over the Internet.  Embellished with tasty add-ins like bacon or salsa, who could resist? 

At the same time, I was on a bit of a Greek flavor binge.  Egg Lemon Soup (Avgolemono) with Spinach, Greek Salad, Mmmm!  So how about some Greek Deviled Eggs?  

Feta cheese, prominent in these–and a mainstay of Greek cooking, is a taste delight.  Mild, tangy and salty, it is sure to liven up any dish.  And so, even with just a few ingredients, these Greek Deviled Eggs are loaded with flavor.

Greek Deviled Eggs

Brunch season (Easter, Motherā€™s Day) is almost here, so I thought it was time to bring them out.  Wouldnā€™t Greek Deviled Eggs look nice on a buffet table?  Happy spring!

Ingredients
  1. 6 eggs, hard-cooked & peeled
  2. 1/3 cup lite mayonnaise
  3. 1/3 cup feta cheese
  4. 1/2 teaspoon dill, plus extra for garnish
  5. 1/4 teaspoon salt, or to taste
Instructions
  1. Cut hard-cooked eggs in half lengthwise. Carefully scoop out yolks and place in mixing bowl, reserving the whites.
  2. Add mayonnaise, feta, dill and salt to the egg yolks. Mash with a fork until well blended
  3. Scoop egg yolk mixture back into holes of egg white halves, mounding slightly.
  4. Top with a sprinkle of dill.

    There’s several reasons why I am excited about Spring. First and foremost is the flowers that will be blooming. Yes, leaves and flowers…that is very special…and it is going to be time to plant those vegetables. Second, its really nice to be outdoors…no extra weight carrying a heavy jacket or other items. Probably the least important is the great way it feels to get a little suntan as your outdoors at the pool. Spring gives us freedom; it allows us to lighten up and makes us hydrate by drinking more water.
