Burrata with Roasted Strawberries and a Giveaway

Fresh mozzarella is all the rage.  In salads, or appetizers, it can put a recipe over the top!  But let me tell you about a special variety that really shines.  It’s called Burrata–like in this Burrata with Roasted Strawberries and Red Wine Sauce.   Now at first glance, a ball of Burrata looks at a lot like fresh mozzarella.  But … Continue reading

Strawberry Stuffed French Toast & Veggie Wednesdays

I just had another one of those “V-8” moments.  Like, why have I never made Strawberry Stuffed French Toast before?  Custard-y bread filled with cream cheese and berries, it is easy, tasty, and healthier than plain French toast.  Over the holidays, my college kids were home from school. I loved the fun and camaraderie–including special breakfasts that start the day … Continue reading

Triple Antioxidant Cabernet Blueberry Cranberry Sauce

Thanksgiving is on the horizon–are you ready to shake up some tradition?  How about trying a Triple Antioxidant Cabernet Blueberry Cranberry Sauce?  The inspiration for this came from the blog Averie Cooks (thanks Averie!).  But while she seasoned with “sweet spices” like cinnamon and cloves, I decided to take mine more savory with thyme and bay.

Fall Colors Raspberry Salad & a Giveaway

The fall leaves are turning late this year.  No problem—they will change when they are ready, in a bright profusion.  And while we wait, how about some great color in this Fall Colors Raspberry Salad? This recipe was inspired by a delicious organic raspberry lime salad dressing I just got from Litehouse foods. I love raspberries, but usually find raspberry … Continue reading

Blueberry Strawberry Parfait USA

The 4th of July holiday is a time for fun and celebration!  This year I am trying to be health conscious as well and wanted to make a dessert that was healthier–but still keep all the fun!  What better seasonal food to use for this day of red, white and blue than berries!   So I layered strawberries, blueberries and a … Continue reading

Strawberry Lemonade Popsicles

Can the weather have multiple personality disorder?  We had frost last week, shorts weather over the weekend and next week will plunge back to highs of 50-something. I am going to stop trying to plan planning and just keep Strawberry Lemonade Popsicles in the freezer!   But summer will come—and I’m determined to take full advantage!                 … Continue reading

Strawberry Blueberry Galette a la mode

Strawberry Blueberry Galette

I am particular about my fruit pies. The fruit must be tender, the flavor, sweet-tart.  But especially important is the ratio of fruit to crust.  I expect the two to meld like a symphony, the low notes of the crust complimenting but not overtaking the melody of the fruit.  And I call my kids picky!    This Strawberry Blueberry Galette hits the … Continue reading

Whipped Strawberry Pie

Have you ever turned a problem into something amazing? Recently I discovered gallons (yes, gallons) of frozen strawberries in the basement freezer—preserved from the 2015 harvest.  I panicked at first, then turned them into Whipped Strawberry Pie (Strawberry Silk Pie per my husband).  It was the hit of Mother’s Day brunch!  As a dedicated locavore, I try to preserve lots … Continue reading

Pavlova Wreath decorated with sugared cranberries

Pavlova Wreath Meringue Dessert

I am seriously obsessed with meringue.  There is something special about a dessert that is sweet and crisp and light as air.  Who would have thought that beating egg whites and sugar could be so magical?  Pair it with fruit and/or whipped cream and it’s over the top.  When I saw a picture of this Pavlova Wreath at She Wears … Continue reading

A Piece of Vanilla Berry Cake

Sugar-Kissed Vanilla Berry Cake

Autumn is coming…   Nooooooo!  But berries, harbingers of summer, are still abundant in woodlands, farms and supermarkets.  After waiting so long for real summer (it feels like YEARS!), I can’t even think about giving it up.  So I’m making a Vanilla Berry Cake.   The original recipe came from the blog 101 Cookbooks.  Prepared with raspberries and whole wheat pastry flour, … Continue reading
