That’s right, they’re making cheese even creamier, just in case it wasn’t indulgent enough!   

I can’t remember when I had my first taste of burrata, but for a couple years now I’ve been topping it with fruit and red wine sauce for an indulgent dessert.  Burrata with roasted strawberries or cherries in red wine for the holidays, mmm!  ‘Tis the season for indulgence, right?

Dinner Party Starter?

But I did notice lots of other people using burrata in more savory dishes and thought, hmmm, why not try swapping my usual sweet fruit topping for mushrooms & herbs.  Keeping the red wine of course.

And Burrata with Mushrooms in Red Wine was born–to the wild delight of my mushroom-crazed husband!  And the rest of the family as well 🙂 !

While I’m clearly a serious burrata lover, there is one thing to be aware of.  Burrata is not inexpensive so I usually serve it for smaller events rather than for a party of 25.  But totally worth it (check Trader Joe’s or Woodman’s for better prices)! 

I should also mention that Burrata with Mushrooms in Red Wine is super easy–and I can’t figure out how you’d ever “break” it.  So if you want an impressive first course or appetizer or even fun light dinner (just add salad), give it a try!

Burrata with Mushrooms in Red Wine

Ingredients
  

  • 2 T Butter or oil
  • 8 ounces fresh mushrooms assorted, sliced
  • 1 Tablespoon chopped shallot
  • 1 cup red wine
  • 1 Tablespoon fresh thyme
  • Salt pepper to taste
  • 8 ounce Burrata

Instructions
 

  • Heat oil in pan, then add shallots, mushrooms and a sprinkle of salt. Sautee until starting to caramelize.
  • Add red wine and thyne then cook until reduced. Taste, then adjust salt and pepper.
  • Cut burrata into 2 ounce portions. Top with mushroom sauce & serve immediately.
