Whew, it’s been a busy week—full of holiday festivities!  Hooray!  

It started with my husband’s work party (overnight in Chicago) Friday, then an extended family party at our house on Saturday and finally my book club Christmas party on Tuesday.

Gotta love the season!

Now if there’s a downside to holiday parties (besides a little weight gain), it’s that all that partying isn’t always good for the planet!  I just read that between Thanksgiving and New Year’s, Americans throw away 1 million extra tons of trash per week!

I host a couple parties every holiday season and try to use “real” (not disposable) dishes as much as possible.  But for my biggest party, with aunts, uncles, cousins and their kids, I have to cry “uncle” ( 🙂 ).  And even if I had place settings for a party that can run to 60 guests, I wouldn’t have room to stack the dirty dishes.

What’s a green gal to do???  Use compostable dishes!

Yup, goodbye holiday guilt (though I think I need to buy some carbon offsets myself for all the extra cooking)! 

The plates and bowls I received worked great for the party.  We set up bins for compost, trash and recycling and with minimal “trash patrolling” everything went into the right bins. And one of my guests commented that she loved their sturdiness of the dishes—no fear of embarrassing holiday plate collapse!

Ingredients
  1. 15 count package phyllo cups
  2. 1/4 cup Boursin cheese (I used shallot and chive flavor)
  3. 3 ounces lox or sliced smoked salmon, cut into 15 approx. 3/4 x 1.5 inch pieces
  4. 1 large dill sprig
  5. 2 Tablespoons capers
Instructions
  1. Thaw phyllo cups according to package directions.
  2. Spoon a scant teaspoon of into each cup (I found it was easier to roll into a ball, then flatten). Top with a folded piece of salmon.
  3. Garnish with a mini-sprig of dill and 2-3 capers.
