Baby Guinness Shot
Topping Kahlua with Bailey’s creates a drink that looks like a tiny Baby Guinness. But with the creamy, sweet flavors of coffee & Irish Cream! Yum!

What comes to mind when you think of celebrating St Patrick’s Day? I usually think of warm Irish Coffee, cool foamy Guinness, or a festive green beer.
Now back in the day, I was an Irish dancer so I’d be out at the pubs for days around the festive holiday. But this year, we’ve got a late blizzard coming in, so I’m going to celebrate at home with a fun Baby Guinness.
It starts with rich coffee-flavored layer of Kahlua. Then it’s topped with a creamy white layer of Bailey’s (or other) Irish Creme, so it looks like a miniature foam-topped Guinness.

How to Serve / Variations
While Kahlua is the classic base for this, with coffee flavor that pairs perfectly with a sweet creamy liqueur like Bailey’s, it might not be appreciated by coffee haters. In that case you could try this with another dark liqueur like a nut liqueur.
If you’re vegan, consider topping with an oat milk based Irish Creme liqueurs. No deprivation here!

Tips & FAQs
I tried two different ways to get my Irish Creme to form a nice top layer. First, i poured a little into a spoon and dribbled it in. This worked well, but was pretty slow. Next I tried the commonly recommended method of pouring it on top of the Kahlua and just using the back of a spoon to break it’s fall. This is what I stuck with but you do you. Just practice first.
A clear glass shot glass is perfect for serving. And while shot glasses used for measuring are usually similarly sized, you’ll find more variation in glass shot glasses since they’re used for other things like desserts. You may wish to adjust the amount of Kahlua so the drink goes right to the top of the glass (like you’d serve a Guinness beer).
Or if you are known to wobble and spill an occasional drink like me, go ahead and stay on the short side.

This is such a fun idea for St. Paddy’s! I love how simple it is but still looks super cute and festive. That little layered ‘foam’ on top really does make it feel like a mini Guinness.
