Whisk eggs, milk, vanilla and 1 teaspoon sugar until well combined.
Set aside 1 cup of the sliced berries and sprinkle with a teaspoon of sugar (to help some juice come out. The other cup will be used to stuff the French Toast.)
Spread one side of a slice of bread with about an ounce of cream cheese.
Place about 1/4 cup of the non-sugared sliced berries in the middle of the patch of cream cheese. Leave about 3/4 inch uncovered on the sides for sealing.
Top with a second slice of bread and press around edges to seal.
Dip in egg batter, then fry on both sides in large frying pan sprayed with nonstick spray, about 3 minutes per side.
Repeat with remaining bread.
Slice finished French toast on a diagonal and dust with powdered sugar if desired. Serve with additional strawberries and maple syrup.
