1/2cuponion jamor homemade caramelized onions, 1/4 – 1/3 cup per pizza (see note for how to caramelize onions)
2pears1 per pizza
4ouncesgoat cheeseor go wild and use more
1-2TablespoonsOlive oil
1-2TablespoonsBalsamic glazeor balsamic vinegar (see note)
Instructions
If not using pre-baked crust, toll out dough thinly into two pizzas, pricking each crust with fork (to prevent bubbles from forming). Place crusts on parchment for easy transfer to oven.
Top each pizza with about 1/4 – 1/3 c of onion jam or caramelized onions. Slice pears thinly and spread evenly over pizzas.
Top with pinches of goat cheese, then sprinkle with olive oil and balsamic vinegar syrup.
Bake in preheated 425 oven for about 8-12 minutes or until pear edges are starting to bubble and crust is golden.

I keep a balsamic glaze in my pantry. But you can turn balsamic vinegar into a thicker, super-flavorful glaze by simmering until syrupy (remember it will thicken as it cools). But plain balsamic vinegar will work too.To caramelize onions (if not using pre-made onions): In a small frying pan, melt 1-2 Tablespoons butter (or heat oil), then add 2 large thinly sliced onions, sliced pole to pole. Cook on medium, stirring occasionally until onions are a rich golden brown. If the onions are sticking to pan, stir in water a tablespoon at a time and stir in any tasty brown bits. This will take about 20-30 minutes, depending on cooking temperature and how dark you want them.
