This deceptively simple Portuguese Tuna Salad, with canned tuna, beans and cilantro, topped with a flavorful vinaigrette, will surprise you with its delicious and complex flavor profile.
18ounceswater-packed tunadrained (solid light if available), 3 cans
15ounces garbanzo beansdrained
15 ouncesblack-eyed peasdrained
1cupchopped cilantroor parsley
Dressing
¼cupextra virgin olive oil
2Tablespoonsbalsamic vinegar
1-2shallotsfinely chopped
2clovesgarlicfinely minced or “pressed”
1Tablespoonlemon zest
1Tablespoonlemon juice
1teaspoonsaltor to taste
Instructions
Combine dressing ingredients and set aside.
Drain garbanzo beans and black-eyed peas, rinsing if needed. Drain tuna then combine with the beans, peas and cilantro (or parsley). Add dressing and toss to combine.
