½large apple – choppedother half goes into dressing
½cupdried cranberries
½cupchopped pecan
2scallions - sliced
Dressing:
1Tablespoonsapple cider vinegar
1tablespoonshoney
½appleleftover from coleslaw ingredients
1/4cupmayonnaise
1/4cupGreek yogurtsour cream can be substituted
¼teaspoononion powder
¼teaspoonsalt
¼teaspoonpepper
Instructions
Combine slaw mix ingredients in a large bowl.
In a blender, puree mayonnaise, vinegar, honey and half apple until smooth. Stir in the remaining dressing ingredients. Pour dressing over slaw mix and toss until well combined.
Serve immediately or refrigerate until needed and toss before serving.
