A classic on raisin bagels, Strawberry Cream Cheese (with a secret ingredient) whips up quickly and easily. Also good on pancakes, as a fruit dip, etc.
4ouncesfrozen strawberriesabout a half cup of chopped berries, thawed
4ouncescream cheesesoftened
1Tablespoonsugarreal or substitute or to taste
1teaspoonlemon zestoptional
Instructions
Thaw frozen berries, then squeeze out a tablespoon or two of liquid (see note if using fresh). Coarsely puree.
Cream the cream cheese using a mixer or a small food processor (my blender blade was too high for this). Add berries, sugar or substitute, and lemon zest and mix until blended. Taste and adjust sugar to taste.
Serve with bagels, crepes, crepes, apple slices or ???
Notes
I have not tried this with fresh berries, but have two suggestions to avoid excess moisture, since you won’t be able to squeeze them drier. Suggestion one: don’t puree, just finely chop (or go halfsies on pureeing/chopping). Suggestion two:, sprinkle sliced berries with some extra sugar, and let them sit in a strainer until they release some of their juice which you can then discard.
