I seem to say it this time every year—where is the summer going?  And to make things worse, I just realized that the first preseason football games are coming up. 

So I knew it was time to test some game day snacks.  Like these Baked Marinated Chicken Wings.

It was forever ago, when I tried this tasty appetizer, in my very first professional job.  A coworker brought them in for a food day and when everyone else loved them as much as I did, I had to have the recipe.

In a spirit of full disclosure, I made just a half batch for these photos.  Which my husband and I promptly polished off for a late breakfast (shhh).  Does that make them brunch food too?

Step by Step Overview

Making this is super simple.  I just mixed the marinade ingredients,

Poured them over the wings, then covered and refrigerated overnight.

Then I set them on a parchment lined baking sheet and baked for 2 hours.

Tips & FAQs

Pineapple juice is available in 6-packs of 6-ounce servings which makes it convenient for recipes that don’t use a lot.  And to use up my small can, I subbed the extra juice for some of the water.  (You could also serve this tasty Blue Hawaiian Cocktail which will help you use up even more pineapple juice!)

I use an unbleached, (home) compostable parchment paper when I feel I need to line a pan.  In this case, even with a sticky marinade baking on for 2-3 hours, cleanup was a snap.

It struck me that these wings cook at the same temperature as the ham I bake every year (with a second entrée–my family has high expectations) for Christmas Eve.  I think I may be serving a new hot appetizer this year!

Ingredients
  

  • 1 cup sugar
  • ½ cup oil
  • 1 cup water
  • 1 teaspoon ginger
  • 1 cup soy sauce
  • 1 teaspoon garlic powder
  • ¼ cup pineapple juice
  • 4 pounds chicken wings

Instructions
 

  • In a medium bowl, combine first seven ingredients (everything but the wings).
  • Pour over wings, cover and marinate in refrigerator overnight.
  • On 1-2 parchment lined baking sheets, bake uncovered at 325 for 2-3 hours. Check the wings halfway through and reduce the heat if they are browning too fast.

    Well, since I don’t do any football watching, I don’t feel like I have to eat wings! So I always take wonderful wing recipes, like yours, and make them with chicken thighs! I love the zinc from the pineapple juice. That’s a great idea!

      Great idea on the thighs, David! And I didn’t know that pineapple juice has zinc. Now I have more reasons to make again!
