4 Ingredient Strawberry Rhubarb Smoothie
This Strawberry Rhubarb Smoothie is creamy, fruity, and refreshingly sweet/tart. And as close as you’ll get to a fruit crisp without heating up the kitchen!

Is there any food more symbolic of long winter’s passing than rhubarb? That’s because, weeks before other edible plants, its graceful stalks conspire to push their way up toward the sun. Almost like they’re saying Here I Come, Spring!
And happily, rhubarb then sticks around for a month or two (or more) to make sure you’ve had every opportunity to partake in its bounty! What a generous plant! (See my Rhubarb Growing Tips if you’d like to add some to your garden!)
Now while this Strawberry Rhubarb Smoothie isn’t as glamorous as my Strawberry Rhubarb Crumble Pie or as folksy as my Strawberry Rhubarb Shrub, it makes up with it’s simple preparation, lovely tart sweet flavor and healthful ingredients.
How can you argue with a combo like that!

Why You’ll Love This!
Easy. Just blend up a few ingredients in a blender. How easy is that!
Healthy. Calcium-rich yogurt, a vegetable (yes, rhubarb is botanically a veggie), and fruit, plus a little maple syrup makes this a guilt-free treat! And if you’re sugar-free, use a few drops of stevia instead!
Fun. It’s always more fun to “drink your veggies,” don’t you think?

Tips & FAQs
I say it in the recipe, but really do peel the rhubarb if you want the smoothest puree. Even with my Vitamix, I had some strings. It’s easy as long as you peel it before you chop it—just grab a string and pull. If the strings are hiding, just make a cut and they’ll likely reveal themselves.
I like to use a plain yogurt in my personal cooking. That’s because I prefer to control what gets added to my yogurt. But really anything will work, sweetened or not, thicker or thinner.
If you’re a thick smoothie person, use frozen chopped rhubarb and strawberries (I just stuck a plate of chopped fruit in my freezer). When I used all fresh, even adding a big handful of ice cubes didn’t make it especially thick. It was, however, still tasty.

My favorite smoothie (or yogurt bowl) add in is ground flax seed. It’s super nutritious so I keep it around in my fridge or freezer. Per Healthline:
“One serving of flaxseed provides protein, fiber, omega-3 fatty acids, and essential vitamins and minerals. Flaxseed may help lower the risk of some cancers, maintain a moderate weight, and reduce cholesterol and blood pressure.”
But since the Strawberry Rhubarb Smoothie is so healthy in the first place, you do you!

Strawberry Rhubarb Smoothie
Ingredients
- ½ cup reduced fat plain yogurt regular or Greek
- ½ cup strawberries chopped, ideally frozen
- ½ cup rhubarb chopped, ideally frozen
- 1 Tablespoon ground flax seed optional
- 1 Tablespoon maple syrup optional, or a few drops of stevia*
Instructions
- Ideally, peel the rhubarb before chopping it.
- Place ingredients in blender and puree until smooth. Tamp down or stir as needed. If too thick to blend, you can add milk a Tablespoon at a time and re-blend.


I love how you capture the spirit of rhubarb as a true sign of spring, it’s such a hopeful, vibrant plant and resilient too! I remember I tried to kill our one before as we are doing some minor landscaping, it never dies!! Can I use dairy-free yogurt in this smoothie without affecting the texture or flavor too much? Also, would honey work as a substitute for maple syrup?
Yes to both of these. The biggest impact on the texture is using frozen fruit. Enjoy!
I haven’t tried rhubarb in smoothies. The sweet tart flavors sound lovely in this smoothie.
If you like the strawberry lemon combo for tartness, this reminded me a lot of that–though you get rhubarb flavor too.
