I had high hopes when I decided to try this unique new salad. And happily, my hopes were well founded!

The reason for such great expectations?  The recipe came from one of my CSAs, Springdale Farm, where I had eaten a delicious lunch last February.  The foods were all vegetarian and I was delighted and impressed with the taste and variety served.

It seems far less natural than my organic, pastured, never fed corn or soy real ham.

But give me a vegetarian dish that glories in the taste of the earth, and I am so there.

This Dutch Farm Potato Salad brings together a wide variety of flavors, however, and a little part of me worried it wouldn’t come together. But after dragging a forkful of salad through the homemade mayonnaise, well… it was pure delight.

One of the owners of the CSA is Dutch and I had to wonder if it was an old family recipe. I left it almost exactly as written, but did reduce the dressing some. Now one thing that I strongly suggest is that you go with a good, real mayonnaise if you make this. I always say that mayo is either for flavor or for sticking things together. If you just need the stick, a nice light mayo is fine, but for flavor you want something real.

Ingredients
  

Salad:

  • 1 cup diced cooked potatoes
  • 1 cup diced cooked beets
  • ¼ cup thinly sliced onion
  • 1 small apple diced
  • 1 hard-cooked eggs diced
  • ½ cup firm cheese cubes e.g. Gouda, Cheddar, Edam
  • ¼ cup diced pickle

Dressing:

  • 2 Tablespoons cider vinegar
  • 2 Tablespoons extra virgin olive oil
  • Salt pepper to taste

For serving:

  • ¼ cup or more good mayonnaise

Instructions
 

  • Combine salad ingredients and toss until well mixed.
  • Whisk together dressing ingredients then toss with salad.
  • Serve salad with a generous dollop of mayonnaise.

      I have used apple in cole slaw but you’re right–this more of a stretch. So I was happy it came together!

    The addition of beets fascinates me. Wondering why the salad doesn’t look redder? (Beets having the reputation of turning everything in their path red.) Perhaps there are all colors of beets?

      Good question Kathy. I used yellow beets in this. That’s just what I had from my CSA. You know I never thought that if I’d used red beets, I might have had more red color running through. I’ll have to give that a try to find out next!

      I thought so too and was waiting to see it’s impact on the taste. In the end the hint of sweetness was a nice flavor note. I’d probably sub pears if I made this off season when fresh apples are harder to get.

      I did use the golden beets just by chance because that is what my CSAs had sent. With your comment and the other (below), I am thinking that was a lucky accident!

      You know I debated calling it a potato salad. My kids are picky about food names, however, which seem to set expectations for them. And I could just hear “this isn’t potato salad…” 🙂

    This sounds scrumptious even without the mayonnaise… but since I love a good homemade mayo I’d add it on the side too.

    There salads like this in Germany. I remember a herring salad with beets and potatoes. I enjoy eating salads like the one you posted .

      I guess it’s not surprising that Germany would have similar salads. I wonder why we don’t see them over here more…
