Tasty Keto Waffles

Fluffy, sweet, and fun, keto waffles are just as good as the original.  Serve them for breakfast, snacks or dinner!  Gluten free too!

Pancakes, I can take or leave.  But waffles are the stuff of dreams.  Fluffy, sweet and light, they’re good simply with butter and syrup.

But serve them with fruit and whipped cream–or maybe even fruit and ice cream and they’re over the top!  You can even do them savory, like the famous chicken and waffles!

Now the one downside is that waffles have a lot of carbs.  And with brunch season right around the corner, who wants to pass up the waffles and feel deprived.  That’s why I’m really excited to have a new recipe for keto waffles that is low carb and gluten-free.

Not to mention so tasty I had to fight my husband for my share the day he hand-modeled (pouring syrup) for me!

Why You’ll Love This!

Flavorful.  Unlike many keto recipes, this tastes like a waffle, not an egg puff. It’s even better topped with berries and whipped cream (sweetened with sweetener, not sugar, of course).   Or dripping in butter and sugar free syrup.

Easy.  Just mix up the ingredients, pour into you waffle maker and cook.

Fun.  Waffles are always fun—that’s why they serve them for hotel breakfasts everywhere.  And if you’ve been surviving on a breakfast of eggs and meat for your keto or low carb diet, this is even more fun.

Keto, Low Carb, Gluten-free.  My daughter went gluten free at the same time I decided to go low carb.  So now this waffle is double handy!

What You’ll Need

Ingredients

  • Eggs.  These help the waffle rise and hold together.
  • Vanilla.  This adds flavor.
  • Sweetener. This adds flavor and reduces bitterness in the almond flour.
  • Half and half. This adds liquid and richness.
  • Water. 
  • Coconut oil.  This adds richness and a slight sweetness.
  • Almond flour.  This is a low carb substitute for wheat flour.
  • Baking soda.  This helps the waffle rise.
  • Flax seed.  This adds nutrition and nutty flavor.

Special Tools

  • You’ll need a waffle maker!

Step by Step Overview

Place ingredients in a large mixing bowl.

Beat together until mixed.

Cook in waffle maker according to manufacturer’s directions.

How to Serve

Part of the reason waffles are fun is all the ways you can serve them!  And happily, many of these work on a low carb diet too.

The most obvious choice is to go traditional which means butter and (sugar free) syrup.  Or serve your keto waffle with whipped cream (sweeten with a non-caloric sweetener for low carb) and top with keto-friendly berries, like blueberries.

And your kids will think you’re the best if you top their waffles with a scoop of ice cream. 

Finally, don’t forget that keto waffles can go savory too like fried chicken and waffles.  Or go both sweet and savory with a  nice Loaded Waffle Bar!

Tips & FAQs

Did you know you’re not supposed to use non-stick sprays like Pam on (most) non-stick bakeware?  Per this America’s Test Kitchen article, it can sauce the surface to degrade. (Note that I don’t generally buy non-stick due to PFAS concerns, but a nonstick waffle make was gifted to me). 

This made 2 large (4 section) waffles in my restaurant style waffle maker, which would make 4 servings (unless you eat like my husband, then 2).  Your waffle count will vary based on the model of waffle maker you have.

These waffles can be made in advance and refrigerated or frozen until needed, then reheated or toasted.  But if you make the very tall hotel style waffles, be aware that the thickness means that they’ll burn easily in the toaster and watch carefully.

  • 2 eggs
  • 2 teaspoons vanilla
  • 32 drops stevia or another sweetener to taste
  • 1/4 cup half and half
  • 1/4 cup water
  • 2 Tablespoons coconut oil melted
  • 3.2 ounces almond flour 1 cup fluffed and spooned, not scooped
  • 1/2 teaspoon baking soda
  • 2 Tablespoons flax seed

Instructions

    Okay, you had me at “fight my husband for my share”, that’s how you know these waffles are legit! As someone who’s always torn between craving carbs, this recipe feels like a lifesaver (and a treat!). Love that they’re gluten-free too, double win. Now I just need to resist topping them with all the whipped cream and berries. Brunch is officially saved!
