Tom and Jerry Batter
There’s nothing quite like a hot toddy to warm you when winter sets in. Here is a recipe for Tom and Jerry Batter to make the classic alcoholic beverage.

They say every cloud has its silver lining. And one of winter’s has to be the hot toddy—a warm, often sweet, alcoholic beverage. Like Hot Buttered Rum, spiked hot cocoa, or today’s Tom and Jerry cocktail.
The boozy drinks always take me back to my youth when we had a cabin across the street from a Wisconsin ski hill. I didn’t ski but that didn’t mean I didn’t have fun. I used to watch my father’s bright orange hat go up and down the ski hill as he did a series of runs. Then as soon as the motion stopped, I’d slip on my boots and head for the attached restaurant.
My father would be seated at the bar sipping a hot toddy. And before you knew it there was another bar stool and a drink for me. Yup, who needs skis!

Why You’ll Love This!
Fun and warming. While it isn’t quite as much fun as the ski hill bar, serving up a nice Tom and Jerry at home is the next best thing.
Easy. You make the Tom and Jerry batter up once, then store it in the freezer for drinks all winter!
Ingredient Control. I usually buy Mrs. Bowens mix and the ingredient list isn’t half bad for a packaged food. But making my own I can use organic eggs and avoid the (likely GMO) corn syrup/cornstarch.

Step by Step Overview
Make the Tom and Jerry batter:
Place egg whites, sugar and water in mixer bowl and whisk together.

Place bowl on top of a saucepan with about an inch of water. Heat, whisking regularly to 160F. Make sure that sugar is dissolved.

Take the mixer bowl off the stove, then beat on high until mixture is thick and fluffy. Mix egg yolks, cloves allspice cinnamon salt and vanilla in a small bowl. Fold into egg white mixture.

Transfer to a 1 quart container and store in freezer.
Make one Tom and Jerry drink:
Add ¾ ounce (1 ½ Tablespoons) each brandy and spiced rum to a mug.

Top with a heaping Tablespoon (about 3 level Tablespoons) or Tom and Jerry batter. You can use more or less to taste.

Fill the mug with boiling water and stir until mix is dissolved.

Sprinkle with cinnamon or nutmeg (optional). Serve immediately.

Tips & FAQs
For an alcohol free Tom and Jerry, omit the alcohol and maybe use a smidge more batter. It will still be tasty and warming!
I make this a little differently than some online recipes which may simply whip egg whites and sugar together, then add yolks and spices. I was looking for enough stability to help this last through the winter (frozen) but still something that was really easy.
I went with what is basically a Swiss Meringue which also has the advantage of getting the egg whites to a food safe temperature (160F). The egg yolks in this, however, are not cooked. So the FDA would tell you to use pasteurized eggs.
When you heat the egg whites, sugar and water, make sure that the sugar dissolves (I rubbed a little of the mixture between my fingers to test). Undissolved sugar is gritty plus it won’t whip into the nice thick meringue that we’re looking for.
