I love the 4th of July holiday!  And isn’t it nice how the red white and blue color scheme is here just as the matching berries arrive!

A few years back, I made Blueberry Strawberry Parfait USA with berries and mascarpone cream.  Then I added skewers of blueberries and star shaped watermelon.  So much fun!

Red White and Blueberry Parfait with Meringue Stars

Now I wondered.  How do I top that—and still stay with my current goal of food that is delicious and easy?  

So this year, I decided on another parfait but skipped the mascarpone cream mixture and used plain whipped cream.  You could even go with a spray can. 

Then, since I’ve done so much with meringue recently, I decided to make my stars out of meringue.  If meringue sounds hard, let me tell you it really isn’t.  Just beat up a few ingredients, pipe out some basic stars and bake.

The meringue recipe makes more than you need for the dessert, so cut it in half if you don’t want extras.  But we had so much fun eating the leftovers—with whipped cream or plain like cookies, that I decided to keep the bigger quantities.

Assemble parfaits

When it was done, I debated about what to call the dish.  Technically a parfait is a layered dessert and this is more freeform.  It also bears resemblance to an Eton Mess–whipped cream, fruit and meringue all tossed together.   Since I didn’t stir my pretty berries and stars into a mess, I figured parfait was closer.

Despite its simplicity, my Red White and Blueberry Parfait with Meringue Stars turned out to be a major hit.  I think there were actually tears shed when the last star disappeared. 

But easy enough to do again.  Soon!

Meringue Ingredients
  1. • 2 egg whites
  2. • 1/8 teaspoon cream of tartar (optional)
  3. • 1/2 cup granulated sugar
  4. • 1/4 teaspoon vanilla
Other ingredients
  1. 1 pint blueberries
  2. 1 pint strawberries, cut into bite-sized pieces
  3. 2-3 cups whipped cream (homemade or spray can)
Instructions
  1. Preheat the oven to 200 degrees F. Line a baking sheet with parchment paper.
  2. Beat the egg whites and cream of tartar on high speed until soft peaks form. Add the vanilla, then gradually add the sugar and beat on high speed until the egg whites form very stiff peaks.
  3. With a large star-shaped pastry tip, pipe meringue stars onto the parchment.
  4. Bake for 45 minutes, or until the meringues are dry and crisp but not browned. Turn off the heat and allow the meringues to sit while the oven cools another 45 minutes if possible. Remove meringues and allow to cool completely.
  5. To assemble parfaits, put a dollap of whipped cream into a brandy glass or other serving container. Top with blueberries, sliced strawberries and 2-3 meringue stars. Add another dollap of whipped cream, then more berries and stars.
  6. Serve immediately.

    This is brilliant, Inger – the crunch of the meringues is the perfect a accompaniment to the billowy whipped cream and macerated fruit. For a minute there, you had me scared though… I thought next week was the 4th of July and I was wondering where June had gone!

      Usually I am super late on holiday posts and I always feel guilty that no one will be able to make it since I haven’t given them enough time!

      I always struggle with the white in red white and blue desserts (unless they have frosting), so I was glad this worked out!
