Bringing together great flavor and a whole lot of fun, the Eton Mess Bar lets guests mix meringue, fruit and whipped cream for a festive dessert.

Eton Mess Bar Inspiration
Last Christmas Eve, this Eton Mess Bar became my biggest ever dessert hit. You see, every year after an abundant dinner, I provide a great dessert for our extended family. And because people are stuffed and I’m also busy hostessing, it needs to be a dessert that is seriously appealing and very easy.
Now probably most people have never heard of Eton Mess. Per Wikipedia, it’s a mixture of meringue pieces, whipped cream and chopped fruit. The “Eton” part is “believed to originate from Eton College” where it has been served for over a century at an annual cricket match. “Mess” refers to the informal, mixed-up, look of the dish–when it’s all squished together.
It’s a delicious and easy dessert that doesn’t have to look messy. Done as an Eton Mess Bar or a Red White & Blueberry Parfait, I think it’s totally cute.
Originally, I had planned to do this again for an Easter buffet, decorated with beautiful pastel sprinkles like these from Fresh April Sprinkles. Gotta make your Easter dishes look festive in Wisconsin, just to survive until spring.
Sadly, no Easter buffets this year 🙁 . All the more reason to pin for later!
But aren’t these “The Final Rosé” sprinkles cheery? I originally selected them because they reminded me of pink champagne–and nothing beats pink champagne for fun! I think they’d be perfect for New Year’s, Valentine’s Day, Easter, Mother’s Day–so many occasions! Or just for spring. Of course the owner, small businesswoman Lynn April, has many other color combos too!
The other contributor to my Eton Mess Bar was a lovely vanilla from Adams Extract, one of oldest spice and extract companies in the United States. I had already heard of them before as a top maker of clear vanilla (for pure white desserts–so on my list), and I was excited to try their delicious regular vanilla. They also sent lemon extract and natural food colorings. Yes, next time I’m planning to dye my meringues pink!
As someone who’s been known to viciously stab a beet in an attempt to produce a few drops of natural dye, this is going to be a life-saver!

- 2 cups heavy whipping cream
- 2-3 Tablespoons sugar or to taste
- 1 teaspoons vanilla
- (optioonal) 2+ Tablespoons sprinkles for decorating
- 2 egg whites
- 1/8 teaspoon cream of tartar (optional)
- 1/2 cup granulated sugar
- 1/2 teaspoon vanilla
- 4 cups mixed berries, sliced if not bite-sized
Prepare whipped cream:
Beat cream until thickened. Add sugar and vanilla and beat until well-incoporated and stiff.
Prepare Meringue Stars:
Preheat the oven to 200 degrees F. Line a baking sheet with parchment paper.
Beat the egg whites and cream of tartar on high speed until soft peaks form. Add the vanilla, then gradually add the sugar and beat on high speed until the egg whites form very stiff peaks.
With a large star-shaped pastry tip, pipe meringue stars onto the parchment.
Bake for 45 minutes, or until the meringues are dry and crisp but not browned. Turn off the heat and allow the meringues to sit while the oven cools another 45 minutes if possible. Remove meringues and allow to cool completely.
Assemble Eton Mess Bar:
Place meringues in one bowl, whipped cream in another bowl and fruit in one or more bowls. Top whipped cream with seasonally appropriate sprinkles if desired.
Give guests a bowl and let them serve themselves.
