I have always believed in making good use of local food resources. And lately, with the food supply chain problems, I am even more convinced. So I was happy to have some good local fish available for this tasty salad.

Caesar Salad has always been a favorite of mine. From a Classic Caesar to one that’s embellished, like this, you can’t go wrong!

This Smoked Fish Caesar Salad brings together crisp romaine, tasty smoked fish, bacon, artichokes and creamy dressing. Perfect for an entrée or side salad.

Served

Smoked Fish Caesar Salad has a beautiful smokiness from the combination of the smoked fish and smoked bacon. Then, since I am hyper-conscious about getting in my 5-a-day (servings of fruit and veggies that is), I added some pickled artichokes as well.

Have some wine…

Top it off with a good commercial Caesar dressing and it’s even easy. We ate it as an entrée, though a smaller version would also make a great starter salad.

Ingredients
  

  • 4 cups romaine lettuce
  • 4 ounces smoked fish bones and skin removed
  • ¼ cup bacon crumbles
  • 7 ounces canned artichokes about 4 small hearts, quartered
  • 2 Tablespoons shredded Parmesan cheese
  • ¼ cup Caesar dressing

Instructions
 

  • Divide lettuce between two bowls.  Add toppings then drizzle with dressing.  Serve with a crusty bread for a complete meal.
