Lavender Collins
The classic Tom Collins is a sparkling lemonade with the addition of gin (or vodka). Cool and refreshing, it’s even more fun as a Lavender Collins.
Today I was planning to write about bread. I (usually) plan recipes in advance. And waaaayyy back in our unseasonably cool spring, an oven full of fresh bread sounded wonderful.
Cut to mid-July. Today at 5:30 in the morning, it was 78; the high will be over 90. Bread today? Nuh-uh.
But how about a nice cold beverage? With booze?
The inspiration for my Lavender Collins was a recent discovery of flavorful Torani syrups (no not a sponsored post). While I have this fantasy about making everything from scratch, everyone (even me) needs to be realistic about what they can actually accomplish. So when I found they had a lavender syrup, I was soooo there.
The Tom Collins has a long history dating back to the 1800s. I remember hearing about it growing up. Refreshing and light it was something a person might try as a first drink. The drink is classically made with gin but non-fans have been subbing in vodka for pretty much forever.
Of course, back in the day, no one would have added lavender. So I guess we can chalk that up to progress!

Lavender Collins
Ingredients
- 1 1/2 ounces gin or vodka for a mocktail use extra sparkling water
- 1 ounce lemon juice
- 1 ounce lavender syrup such as Torani
- Ice cubes
- 3 ounces sparkling water or to taste
- My garnishes: lemon slices mint leaves, berries, lemon balm flowers
Instructions
- Pour lavender syrup, lemon juice and alcohol into the bottom of a tall glass. Top with ice, then add club soda or other sparkling water.

I have never had a Tom Collins before. It sounds like something I would enjoy! The lavender sounds like a nice touch and adds that floral note. I love the color too!!
