It’s a bit ordinary for an Easter post. But since most people have a menu planned already, I figured what the heck. We’re all gonna want to eat easy food next week anyway, right?

Of course there is another way to look at it. If you think of the appetizer of jam-topped brie wheels wrapped in puff pastry, maybe this isn’t so ordinary after all.

Bacon optional.Like so many other people now, I am working to use up things I have at home. And I discovered a pint of cranberries in my fruit drawer. I often keep some long after Christmas, since cranberries make a pretty garnish any time.

But I am running low on fruit.  And I so hate doing that grocery washing thing.  So those cranberries are goners.

Add bacon (optional) for a bigger indulgence

I have seriously lightened up on my keto, since I’m trying to space out grocery runs as far as possible (helped by a big freezer and some really good local takeout). But I still almost completely avoid sugar. 

The found cranberries also offered me the opportunity to use a sugar substitute rather than one of the sugary jams in my cupboard (based on this recipe). But really, any flavorful jam will work.

Jammy Brie Grilled Cheese

Ingredients
  

Per sandwich:

  • 2 ounces Brie cheese thinly sliced, or spread if soft enough
  • 2 Tablespoons jam
  • 2 slices bread
  • 2 teaspoons butter

Instructions
 

  • Top one slice of bread with sliced brie, or spread the brie if it's soft enough.
  • Top the other slice with jam. Put slices together into a sandwich.
  • Spread 1 teaspoon butter on each outer side of the sandwich.
  • Grill on medium heat until golden on first side. Flip and grill until golden on the other side. Cheese should be soft or melted.
  • Cut in half and serve.

Notes

For an extra indulgence, add bacon bits or slices to the sandwich. (This will increase the calories)

    Brie and fruit is a natural – and put it between bread and grill it in butter? Yes, please! And if you cut the sandwich into small, bite-sized squares, you have a wonderful appetizer to much on during Zoom cocktails!

    I’m so tempted to run the stores to pick up an ingredient or two that I hadn’t thought to pickup but have been managing to stop the temptation. We restricted our stock up runs to once a week. This is great pantry cooking! I would devour this sandwich in a minute!!

      We’ve actually managed to go 2-3 weeks–the freezer has been such a help. Now to keep that organization!

    At Thanksgiving my family has a cheese course for dessert (with the pies). When we were taking out the pies someone noticed the bowl of cranberry sauce never made it to the table earlier. Some of us starting piling it on our brie smeared French bread. So goooooood together!

    Now to convince hubby to pick up a wheel of brie on his next store run.

      After buying the big bag of pre-cooked (real) bacon crumbles, they are going on a lot of things now!

    This looks so good! The washing everything when you bring it home routine is a bit much. But the peace of mind it brings with it makes it seem OK. I am also not shopping as often as I used to. Stay safe!

      Not shopping is what I’m doing too. Other than a couple miscellaneous items (bread, milk), its been weeks, so I’m going to need to grocery shop again this week.

      I found some more in the freezer after I made this, which got me really excited. I was seriously happy it worked with a sugar substitute!
