Pecan Cornmeal Muffins
Added pecan meal makes Pecan Cornmeal Muffins sweet and nutty, with a little crunch. Perfect as a snack or a side with soup.
One of my more fun quarantine activities has been searching out old recipes–dishes I loved but haven’t made in years! Often these were saved on recipe cards and never got typed into my laptop. Out of sight, out of mind!
So when I made Dutch Oven Chili last Sunday, I knew it was time to dig up my Pecan Cornmeal muffins. ‘Cause chili and cornbread are perfect for each other!
Originally from Better Homes and Gardens, I always liked these muffins for the extra richness and even health value from the pecan meal.
Per WebMD, pecans have healthy monounsaturated and omega-3s fats, along with protein, fiber and a variety of vitamins and minerals. Substituted for some of the flour, it’s a nutrition bonanza. Plus YUM!
But the real test is the taste! In the end, the whole family proclaimed Pecan Cornmeal Muffins one of best cornmeal muffins they’d ever had. Even my youngest (aka my “picky daughter”) gobbled them down (but wouldn’t touch the chili, alas).
What to Serve with Pecan Cornmeal Muffins
Pecan Cornmeal Muffins are versatile and go well as a side with almost any meal. Or serve solo as a tasty snack.
But they really shine as a side for soup or chili. Consider pairing them with Smoked Provolone and Thyme Muffins in a bread basket! ‘Cause nothing beats easy comfort food, right?

Pecan Cornmeal Muffin
Ingredients
- 2/3 cup flour
- 2/3 cup ground pecans
- 2/3 cup yellow cornmeal
- 1/2 cup sugar
- 3/4 teaspoon baking powder
- 1/2 teaspoon baking soda
- 2 eggs beaten
- 1/2 cup buttermilk
- 1/2 cup butter melted
- 1/2 cup chopped pecans optional
Instructions
- Preheat oven to 375*F. Grease muffin pan or line with paper baking cups
- In a medium bowl mix together dry ingredients. In another bowl, combine eggs, buttermilk, and melted butter. Add to dry ingredients and stir until just moistened. Fold in additional chopped pecans if using.
- Fill muffin cups 3/4 full. Bake for 18-20 minutes or until golden. Enjoy!

Ohh the last time I written recipes is paper is so many years back, all of them were thrown away and digitized into my blog. Nice to see recipes like that, so nostalgic. Keep safe!
Most of mine are digitized too so the ones left on paper are very neglected. But there’s always a rush of memory to hold the paper again Raymund!
My aunt was the queen of muffins! She would’ve really love these… I’m surprise she hadn’t found them if they were from Good Housekeeping, a magazine which she got for decades.
She probably had a drawer full of ripped out magazine recipes she was waiting to try!
