Avocado Grilled Cheese Sandwich
Creamy, rich and cheesy, this Avocado Grilled Cheese Sandwich takes the classic comfort food to a new level for a quick and easy lunch.

If you’re a fan of grilled cheese sandwiches but haven’t tried an avocado grilled cheese yet, you’re missing out! Like a cross between a grilled cheese and avocado toast, this may be the tasty, easy lunch entrée you’ve been looking for.
And if flavor and simplicity aren’t enough, I saw something on TV recently that surprised me. It said you could count avocado as a serving of vegetables. Come on, I thought, isn’t that like counting butter as dairy serving?
So I consulted my sister who’s a registered dietitian. While she said they count it as a fat for diabetic exchanges, she noted it does have a lot of fiber and some good nutrition. Yes!
Finally, did I mention that an Avocado Grilled Cheese Sandwich is seriously satisfying? Kind of like comfort food for the over-30 crowd! Count me in!

Step by Step Directions
Spread a thin layer of butter on the outside of each slice of bread.

Top one slice of bread with cheese, then avocado. Sprinkle with bagel seasoning or sea salt if desired.

Top with a second slice of bread. Repeat with the remaining ingredients.
Heat a large skillet on medium heat. Place sandwiches in the skillet and optionally cover (covering will help the cheese melt).

Heat until bottom side is golden, then flip the sandwich.

Continue heating uncovered until the other side is golden and the cheese is melted. Serve immediately.
Variations
This is a sandwich that is super easy to customize! Consider adding a little cooked bacon (even pre-cooked bacon bits!). It’s fun–and may make your meat-eating husband happy! Or top with some juicy sliced tomato for another tasty addition.
You can also swap out cheese varieties depending on personal preference—some people even use two different cheeses on a single sandwich. I’d stick with something flavorful but basic such as Swiss, Cheddar or Gruyere. Save the fancy Brie for a Jammy Brie Grilled Cheese.

I made this on an artisan sourdough, but really any quality bread you like will be delicious.

Tips & FAQs
Today I used sliced avocado, but I would also consider mashing it. I guess that’s the influence of all the avocado toast I’ve been eating lately!
I used ½ avo per sandwich when I used larger artisan sourdough bread. When I used sandwich bread, I cut the avocado thinner and used ¼ avo per sandwich. No sandwich police here.

- 4 slices bread I used sourdough
- 1 Tablespoon butter
- 1 avocado peeled, seeded and sliced (you’ll use less if your bread slices are smaller)
- 3-4 ounces of sliced cheese
- 1-2 teaspoons everything bagel seasoning or flaky sea salt optional
