There is an old saying that, unfortunately, rings true–you don’t want to know how sausage is made!  I could deal with that… except sausage is so good.  So I decided to mix up my own to make homemade Italian sausage sandwiches.  Just say “yes” to local, organic pork!

The sandwiches, which we used to call “bombers,” were the “go to” picnic food of my youth.  Cook up a bunch of Italian sausages, cover with pizza sauce, and set into a brat or hot dog bun.  Easy and a taste hit…  watch the grilled burgers languish and the guests line up for sausage.   

But now that I’m all grown up and eating healthier, this is a little tougher.  Even when I can find organic sausages, how high is the salt?

As long as you don’t feel a need to stuff casings, home sausage making is easy–just mix meat with spices, make patties and cook.  I’ve been making homemade breakfast sausage for years, so why not Italian Sausage? 

After trying a recipe off the internet that turned out boring, I decided to try adding every spice in every recipe I found.  Ding, ding, ding!  Yes, it makes for a longer ingredient list but it’s worth it for the flavor.  I set a bowl next to my spice cabinet and toss the spices in (without measuring) and it goes really fast!  (Tip–to make it easier, they are all either 1 or 1/2 teaspoon.)

Traditionally Italian Sausage Sandwiches are topped with peppers and onions.  Raising the world’s pickiest eaters, my mother never even thought about going there.   But now I love adding vegetables to a dish so roasted red peppers (out of the jar) went right on top.  Hooray for grown up tastebuds!

Now that I have the recipe for Homemade Italian Sausage I am excited about other things I might do.  Fill a lasagna?  Yup.  Top a pizza?  Mmmm.  Italian sausage breakfast omelet?  Yes, please!

Homemade Italian Sausage Sandwiches are delicious topped with pizza sauce and peppers. Now up the health value with easy homemade Italian sausage.
Recipe type: Sandwich
Serves: 4
Ingredients
For sausage:
  • 1 lb lean ground pork
  • 1 teaspoon Parsley
  • 1 teaspoon Garlic powder
  • 1 teaspoon Minced onion
  • 1 teaspoon Basil
  • 1 teaspoon Paprika
  • 1 teaspoon Fennel
  • 1 teaspoon Lite salt (or regular)
  • 1 teaspoon Black pepper (coarsely ground)
  • ½ teaspoon Oregano
  • ½ teaspoon Thyme
  • ½ teaspoon Sage
  • ½ teaspoon Red pepper flakes (or to taste)
For sandwiches
  • 4 whole wheat hamburger buns
  • 4 ounces canned pizza sauce
  • 8 ounces roasted red peppers
Instructions
  1. Mix meat and spices together. For best flavor, refrigerate a couple hours or overnight.
  2. For sandwiches, form into 4 patties and fry until cooked through. Top with pizza sauce and roasted peppers
Notes
Consider using dinner rolls to make slider sized sandwiches!

    I literally grew up on sausage and peppers, Inger! Nothing beats a GREAT Sausage & Pepper hero especially when said sausages are home made! Looks like you’ve got a perfect blend of herbs and spices in yours. I don’t usually put sauce on top but, I must say, it sure does look inviting!!!

    Thank goodness our tastebuds change with time. My son is 19 and he still refuses to eat any soup…I’m hoping that will change with time. I love the homemade sausages! It’s always a good thing when you don’t have to push what you are eating out of your mind.

      Lol. Yes, having to repress what’s in your food is probably not a good sign 😉 But I think I was a lot older than 19 when I started eating a number of new foods, so there is hope for your son yet!
